Nicely made, very, very thin at the cutting edge. There was no micro-edge (koba) on the knife and it chipped the first time I used it. Maybe it was missed? Therefore the 3 stars. I put a koba on it and it cuts perfectly. Wicked thin geometry.
So beautiful, so pleasing to touch... I love the shape, the design, the haptics, the ergonomics - perfectly made by mind and hands ä for hands and mind. It feels so natural, so elegant - thanks a lot for the creation.
Hi Veit, thank you so much for your kind words! Enjoy your beautiful piece!
Overall I recommend this knife to someone who actually uses a knife to cut and not push. I enjoy using it. My old and still favorite Kiritsuke has much less of a belly allowing for easier full cuts less wrist roll while slicing. This knife makes for a more of a presentation while prepping, a flatter cutting edge would allow for this knife to be a station machine. My only complaint on the overall finish of the knife is it could use a slight chamfer on the spine of the blade. When I thumb/pointer punch it I am aware of the sharp 90° corner. I took it upon my self to chamfer spine. I’ve been enjoying the exaggerated cutting motion the belly makes the user do. When I have a lot of prep I still use my flatter edged Kiritsuke for speed and fatigue. That being said I would recommend this knife to someone who enjoys using knives as a blade was intended would not recommend for someone who uses it like a hammer. The blade will curve under harsher more demanding cuts, would benefit from a little more weight behind the spine. Blue steel doesn’t bend as much in same cutting situations. I would rate the ginsan#3 very high. It’s not white steel but it sharpens easily and retains its edge. Getting the bur to let go under sharpening is a chore. This is a lot of information but I wanted to share true feed back of the knife itself.
Hi Carl, thank you for such detailed and honest feedback, it’s really useful for us and for other customers choosing a knife. Good point about the spine chamfer, we’ll share it with Inoguchi Hamono. You’re right that this blade is more for precise cutting than heavy work, and glad to hear the ginsan #3 sharpens easily and holds its edge for you. If you have any other thoughts, feel free to write us at info@japanese-food-craftsman.com.
The weight is perfect for me and I have to say it is my favorite knife
I purchased the knife and sharpen tool as a wedding gift for my daughter's upcoming wedding. I have a 7 knife Shun set (for my wife) and 5 Shun dual core and assorted other knives. Love them. I purchased my daughter a Shun dual core Kirisuke which a roommate stole. I replaced. It, too, was stolen.
After watching a YouTube video on how your knife is made, I was impressed (I was a machinist in my younger days). I decided that I'd make one last try at providing her an Heirloom kitchen knife. I inspected the blade on arrival and know that this knife is exactly what I was looking for. I know my way around kitchen knives. This is a solid working blade and I know it will hold an edge through many, many kitchen tasks.
Thank you Randall, and congratulations to your daughter on her wedding! Sorry to hear about the two stolen knives, hopefully this one stays in the family for good. Coming from a former machinist who knows his knives, your words on the blade are a real compliment, and we're glad the video helped you decide. Wishing her many years of happy cooking with it.
**An Outstanding Curved Bunka Knife**
This curved Bunka is an absolute pleasure to use. The blade has a beautiful shape, excellent balance, and a wonderful feel in the hand. The carbon steel cuts effortlessly and feels very responsive, making food preparation smooth, precise, and enjoyable.
The craftsmanship is impressive, with a distinctive character that gives the knife a genuine sense of Japanese tradition. The curved profile is especially appealing and makes this Bunka stand out from more conventional designs.
A beautiful, functional knife made with care and attention to detail. I am very happy with this purchase and would gladly recommend it to anyone who appreciates traditional Japanese kitchen knives.
Thank you for such a wonderful piece of craftsmanship!
Thank you Georgii, and thanks for sharing a photo too! The curved back is what makes this bunka special, and you described it really well. Carbon steel has that responsive feel that's hard to find in stainless, happy it makes your prep more enjoyable. Thank you also for recommending it to others, we'll make sure Nakamura Hamono sees your review.
Unfortunately, I have to report that the tip of the knife broke off after only two uses, despite normal and careful use. This was very disappointing, especially because I had been looking forward to receiving this knife and was planning to purchase the larger version once it became available in the store.
I expected a higher level of quality and durability from a Japanese-made product. As a customer, I am therefore quite disappointed with this experience.

When I received my bowles 2 in blue and 2 in amber I was so amazed how awesome beautiful the colours just alone are. And moreover how perfectly executed craftsmanship the ceramics are - I was so happy and literally became sentimental by looking at and feeling them.
Always nice to see your name, Veit! Two blue and two amber is a great mix. And getting sentimental just holding them, that's how you know it's real handwork. Enjoy them at every meal.
One of the rare knives made of a self composed and in a Tatara-furnace created traditional steel. Without a fancy handle but nevertheless excellent made, perfectly balanced and refined. Due to that almost non-industrial manufacturing-process I was expecting impurities an flaws but I was very positively surprised how meticulously made this knife is. During the last years I have seen, held and felt a lot of Yanagima-knives in different sizes, shapes and prices and I... not that I have to but I want to say that I never have regretted having bought this awesome made knife in which you can feel soul and passion of the master who has created it. Arigato go sai mas
Thank you Veit, and thank you for coming back to us. This means a lot coming from someone who has held so many yanagiba. Tamahagane is never easy to work with, so finding no flaws says a lot about the care the Bizen Osafune workshop put into it. They will be very happy to read this. Kochira koso, arigatou gozaimasu.
Really good lightweight and sharp knife. My old knife was too heavy, this one is much better.
Thanks Katy! A lighter knife makes such a difference over a long prep session, happy you found the right one.
Hi
This is my second Hamono knife... I love it... here is everything what one kitchen knife must have. Very good tool, I think my other knives will get rusty after that. If You don't know what I am talking about then buy one.
Very versatile tool, capable to perform finest cuts needed in kitchen. keep it sharp and it serve long years...
Nigara Hamaono "You doing great work and I am very pleased what You did for me"
Veiko
Thank you Veiko, and thanks for coming back to us! Sounds like your other knives will be feeling a bit lonely now. We’ll pass your words on to the artisan.
A great knife. Exactly what I expected. Very sharp. It almost fell through a big beef tomato I cut the other day. I’ll probably buy more knives from you in the future.
Thanks Geoff! Falling through a beef tomato, that's what we like to hear. Whenever you're ready for the next one, we'll be happy to help you choose.
Very good knife for cutting vegetables, fruit, meat. Very sharp. Cuts tomato with only its own weight just moving the knife without any pressure. Thank you!
Thank you! The tomato test says it all. HAP40 keeps its edge a long time, so it should stay this sharp for a good while.
Quite sharp and easy balance in your hand while cutting. I like it very much. € 43,--. taxes to the Netherlands on top.
Thanks Sjoerd, glad you like it! Sorry about the import taxes, unfortunately they're set by customs in each country, not by us. Hope the santoku makes it worth it.
Thanks for your kind words! We're glad you love the knife.
Thank you for your review! We're glad you love the Nakamura Santoku.
The knife was just like the one he built on the show. When I used it it was excellent. Cutting was so easy and the handle fits my hand very well. It is now my favorite knife
Thank you! Nice to hear it matched what you saw on YouTube, and even better that it’s now your favorite. Happy cutting!
The knife arrived well packaged and on initial inspection was incredibly sharp. Very nice to handle and comfortable in the hand.
Much respect to Mr Nakamura and team. I will enjoy using this knife for many years.
Thank you, Stephen, for your kind words! We're glad you love the Nakamura Santoku and appreciate your support. Enjoy many years of use!
Merci beaucoup, Heidi ! Nous sommes ravis que vous aimiez notre carillon. Salutations du Japon!
The knife is beautiful and arrives extraordinarily sharp and elegantly packed. The blade has a pretty colourful sheen probably caused by the spark-erosion cutting of the cemented carbide.
It is a bit difficult to get out of the box and you are a bit tentative because it is so sharp.
Currently I am waiting to see how long the blade remains sharp but it has not needed sharpening yet.
Unlike some less expensive knives from Japan, on this one you have to pay duty and VAT on import into the UK.
Thank you Nicholas! Glad it arrived so sharp and that you like the colours on the blade. Sorry about the duty and VAT. The UK charges them on imports above a certain value, so this one was affected. Curious to hear how the edge holds up over the coming months.
Excellent knife.
It fits well in the hand, is very lightweight, and is well-balanced.
The package was carefully prepared and protected the knife perfectly.
Delivery took longer than expected, but I always received answers to my questions (thanks to Kei for being so helpful).
I am delighted with my purchase.
Thank you Gérald! Sorry the delivery took longer than expected, and thanks for your patience. Kei will be happy to read this. Glad the santoku feels so good in the hand.
Great product, great craftmanship. Delivery very quick. Thank you very much.
From Italy
Grazie Stefano! Glad the bunka got to Italy quickly and that you like it. Have fun with it in the kitchen.
I love the weight of this knife. So far my favorite, but I have to say the other two are a close second.
Thanks for the review! Nice to hear the weight is perfect for you. Enjoy it as much as the other two!
Thanks for the review! HAP40 is known for holding its edge a really long time, so you'll feel the difference after a few weeks of use. Just avoid bones and frozen food, it's a very hard steel. Let us know how it goes!
