The Nakamura Hamono Kurouchi Nakiri Knife 180mm is a handcrafted Japanese kitchen knife by Nakamura Hamono, a 120-year smithy in Oita, Japan. This double-bevel nakiri knife is crafted with Aogami (Blue) No. 2 Steel and soft iron using the traditionalĀ hon-warikomi technique. It features a kurouchi finish and is fitted with a sakura wood handle. The blade is engraved with the signature of the smithy.

About the Blade Shape: A traditional Japanese vegetable knife, nakiri knives are designed for efficient, straight-down chopping with clean, uniform cuts. The flat edge profile makes full contact with the cutting board, reducing the need for rocking while promoting speed and precision. Typically double-edged and measuring between 165mm and 180mm, the nakiri is ideal for home cooks and professionals focused on vegetable preparation.

    HOW TO USE?

    • OnlyĀ cut food you can bite and chewĀ with this knife sinceĀ hard foods can chip the blade. Do not cut olive pits, bones, lobster shells, wood pieces or frozen food, which are especially badĀ  due to the cold making hard steel more brittle.
    • Do not use the knife in twisting motions.
    • Use wood or plastic cutting boardsĀ to avoid dull knives. Do not use glass,Ā  granite or bamboo surfaces.

    HOW TO CLEAN?

    • After each use,Ā hand wash the knife with mild detergentĀ and a soft sponge, rinse with hot water and dry by hand immediately.Ā Do not use the dishwasher.
    • Wood handles may dryĀ out over time and exposure to water. To prevent this,Ā use some food safe mineral oil or beeswax.Ā Ā 

    HOW TO SHARPEN?

    • Use the FREE WHETSONEĀ included with the knife for sharpening. It is recommended by the manufacturer.
    • Remember toĀ sharpen both sides evenlyĀ as this is a double-bevel knife.

    HOW TO STORE?

    • Wrap the blade in newspaperĀ to reduce direct exposure to the air and prevent rustingĀ if you keep knives in a drawer or travel case.Ā 
    • If you are hanging the knife or using a knife stand, remember that theĀ blade should point downwards.
    • If you are storing themĀ in a drawer, keep the edge from touching anything else.

    Blacksmith Eiji Nakamura opened his workshop, Nakamura Hamono, in 1900 in Oita to provide the local community with practical tools for farming and daily life. Today, his 74-year-old grandson Tetsuyoshi Nakamura runs the shop, along with his son and fourth-generation blacksmith, Kozo Nakamura.

    Excellent Service and A Well-Crafted Knife

    Love the knife, functional and meaningful knowing that it is made by extra-ordinary craftsmen. Enjoy using it a great deal.
    Full disclosure - these are not complaints, just 2 points to note - the knife did arrive with rust on it, and after first gentle wash, rinse and dry, rusty spots were still present, but having googled, realised that some lemon juice soak and wipe did fix it, so maintenance is key. Secondly, the order comes with free stone, but we don't actually need it, so it would be great if it can be an optional thing as the weight and cost do add to the overall shipment and hence increase the un-necessary import tax and duties - in other words, I would have opted for not having the complimentary stone to also save on extra import duties charges incurred because of the extra weight and cost listed to have included the heavy stone.
    Again these are not complaints, just points for continuous improvements, I would be happy to buy again from your store. Many thanks again and keep up all your great work on YT!

    Clean cuts! Sharp knife. Great for industrial use.

    Absolutely love this knife!!! It cuts so cleanly and requires very little care. Someone commented on the change in color, I recommend you clean it well after every use and dry it immediately.     This has been a very positive experience!
    The knives are made in a very traditional way, just what I was looking for. The steel is excellent, the sharpening too, the wa-handle very nicely made and fitted.I own already about 15 Japanese knives, from very expensive to affordable ones. Nakamura Hamono knives didn't disappoint me at all, it's a real pleasure using them, they are well balanced and just "feel good" in my hands.Of course, shipping and packaging were on a high level too.
    I warmly recommend Nakamura Hamono if you are looking for excellent traditional knives, without gimmicks, but with real quality!

    Great knives and craftsmanship.

    I just bought two of their knives, a 165mm Santouku and 180 mm Bunka and love them both. These craftsman knives will occupy a treasured place in the kitchen. Customer service and shipping were excellent, although US Customs tariffs added $77 to the total cost.

    My second order!

    If the character of a blade were heavy, you would not be able to lift these knives. Like everyone else, I saw the You Tube video of the construction in Japan of these wonderful knives. They are genuine works of masters. Until you hold one and see how the San Mai steel shows through and feel the smooth yet so slightly rough natural handles, no one could express their quality. You can see each of the power hammer strikes and I would describe them as razor sharp. (I collected Gerber knives for over 40 years... so yes, I know sharp.) The balance in the hand and at the pinch point is indescribably satisfying. I am honored to own the three I have purchased and I shall own more. Simplicity with abundant character. Thank you.     Nakiri and thin blade small deba knife

    I received the knives in a timely fashion and am extremely pleased with them. These are the second and third knives I have purchased from Nakamura-san and I love the knives. They are not for display, but for daily use and the are super sharp. I just finished thinly slicing onions for a dish we are making and the nakiri is so comfortable to use.     Finest Rustic Blades

    I was looking specifically for a few knives that were more rustic in manufacturing and ultimate presentation - and settled on this maker after watching several vids online.I’ve made quite a few knives here…not the forging but the handles and finishing. I wanted a single craftsman item and that describes this. You won’t find silver inlays or mother of pearl. But you will find excellent balance, incredible sharpness and a lifelong tool as long as you do your part to maintain it. I’m very impressed.

    My best knife yet

    The nakiri from Nakamura is amazing and the best knife I have yet to own. It's also a very fair price for what you get.
    Shipping took less than a month from around the world and even the support was very helpful for correcting a mistake I made. Just a heads up: You probably will have to pay import taxes in your respective country but I can guarantee: It's worth it!
