OMOI × Tadokoro Hamono
Makoto Tadokoro spent 30 years crossing between two of Japan's great knife regions — learning Sakai's most exacting sharpening techniques, then bringing them home to Tosa. Each blade is forged in Sakai by Nakagawa Knives and hand-sharpened by Makoto through 20–30 hand processes most sharpeners have never mastered.
The OMOI collection with Tadokoro spans 10 blade types across kasumi and mirror finishes, multiple sizes, and handle options shaped by your feedback. Each variation is produced in very limited quantities with no restock planned — once gone, they're gone.

OMOI × Nenohi Cutlery
Nenohi operates out of Kanagawa, with a retail presence in Tokyo's Tsukiji district, the heart of Japan's professional kitchen culture.
Their knives are handcrafted in small batches, around ten pieces per day, with specialists overseeing every step from heat treatment to geometry inspection.
Professional chefs across Japan, the US, Netherlands, and Korea trust them. They didn't need this collaboration. But we asked anyway.
Their OMOI collection introduces something that doesn't exist in their standard lineup: an exclusive premium stainless steel with damascus finish, developed through months of R&D and direct input from our community. Three models, built from scratch with us, sold exclusively here.

OMOI (想) is Japanese Food Craftsman's exclusive collaboration brand, created through partnerships with exceptional Japanese artisans to develop pieces that exist nowhere else. In Japanese, OMOI means thought, feeling, or intention. It is the inner spirit guiding a craftsman's hand.
How is an OMOI item different from the maker's standard work?
OMOI items are co-created exclusively with Japanese Food Craftsman. For knives, the configurations, finishes, and handle options are developed based on feedback from our community and are not part of the maker's standard lineup. They are sold exclusively through our store.
Are OMOI items a limited edition?
It depends on the collaboration.
OMOI × Tadokoro Hamono knives are produced in very limited quantities with no restock planned. Each variation has 1 to 2 units available.
OMOI × Nenohi Cutlery knives are restocked monthly in small batches of 3 to 5 pieces per model.
Will there be more OMOI collaborations?
Yes. OMOI is our ongoing collaboration brand and we are actively working on new partnerships. Every collaboration follows the same process: built with community input, developed with makers who have dedicated their lives to their craft.
Where can I find OMOI items?
Exclusively through Japanese Food Craftsman. OMOI items are not available on the maker's own websites, on Amazon, or through any other retailer.
How much does shipping cost?
All OMOI items include free international shipping. Please allow up to 5 weeks depending on your country.
