刃の形状について： 日本の伝統的な魚屠殺包丁である出刃包丁は、 パワーとコントロールで魚を丸ごと分解。太い背骨とかなりの重量により、 頭や骨を切り裂く力、鋭いダブルベベルエッジにより、 正確なフィレット作業。伝統的に魚の調理用に設計されていますが、魚の調理にも適しています。 鶏肉やその他の小さな骨のある肉の切断にも。
