Probably the best knife I've ever owned. It's incredibly sharp and holds its edge exceptionally well. At this price point, I don't think you'll find a better Bunka knife.
I've used Shun knives in the past and always considered them excellent, but this knife is on another level. The delivery was fast, hassle-free, and exceeded my expectations.
I'm so impressed that I'm already looking to complement it with a smaller utility knife. Highly recommended.
The handle was not impregnated at all, it had already absorbed itself when I removed the labels and washed off the remaining glue. It had to be sanded again and then oiled.
Although it was sharp, it was far from a Japanese quality edge. It was sharpened to around 1000 grit. The stone that came with it is 1000 grit in the description but in reality it came to 500-800 which is not suitable for sharpening this knife, only for repairing edge defects or it might chip.
Very satisfied with the item. Knife was very sharp and a new cutting experience for me. Sales team was responsive and shipping was very fast. Thank you for the great item and purchase experience.
Ive just received mine. Lovely piece of art work with a totally practical function: Looked after, I'll never need to buy another 7" knife. Beautifully finished. I'm going to buy a meat paring knife and a larger 210 mil Principal knife. It's all I'll ever need, possibly a bread knife. I'll be able to ditch my knife Block and cheap knives..
Just the best kitchen blade I have ever purchased AND I HAVE BOUGHT MANY.
First of all i love the KISEKI:
It's very well balanced very sharp and it's fun to cut your veggie or meat:
But the slightest "knock" with the blade to anything hard, like a fork or the edge of a plate leaves a visible dent in the cutting edge.
You can only see it, because the knife is so shiny and the the light is reflecting different where the dent is. You can't feel it.
I thought it is more tough !
Great knife for it's price. Good health to the creator and thanks for the good delivery service to Ukraine
Fantastic knife, the best short knife in my small collection, very hard, easy to keep sharp with a diamond sharpening steel. Be sure to dry it immediately after washing, otherwise it can start to oxidize.
Die Verarbeitung ( aussehen) der Klinge könnte bessersein. Ansonsten ein sehr gutes Messer.
Vielen Dank.
Just purchased a 180mm santoku.
I want to thank the Japanese Food Craftsman team, personally Kei-san, and, of course, master Nakamura-san.
The knife feels perfectly balanced, incredibly light, and has a beautifully raw, traditional look with a touch of rugged brutality. It feels like more than just a tool — it’s a piece of living history.
I’ve already coated the handle with linseed oil and sealed the gap between the bolster and the knife tang with a mixture of beeswax and linseed oil.
I’m sure this artisan knife will serve for decades.
Thank you so much!
Hi Maxim Gusev, thank you so much for your heartfelt review! We're thrilled to hear you appreciate the craftsmanship and feel the knife is a piece of living history. Wishing you many wonderful years of use with your Nakamura santoku! Best regards, Japanese Food Craftsman Shop

We love our knife from Nakamura Hamono. So lightweight and laser cutting tool. It's art as much as functional.
Hi David, we're thrilled to hear you love your Nakamura Hamono knife! It's wonderful to know it feels both like art and a functional tool. Thanks for sharing your positive experience! Greetings from Japan, The Japanese Food Craftsman Team
I placed my order on a Sunday here in Germany, and just 10 days later I was already holding the knife in my hands. I was genuinely surprised by the fast delivery.
The knife itself is a true piece of craftsmanship. Visually, it’s a real eye‑catcher, and the first impression in hand is excellent: light, well‑balanced, and very comfortable to hold. Since it’s meant to be a gift, I can’t comment on long‑term durability or edge retention yet, but the initial quality feels outstanding.
For anyone interested: customs fees were €25.14 plus a €7.50 handling charge (Germany)
Overall, I’m very satisfied and happy to be gifting such a beautifully handcrafted item.
Hi elmofant, thank you so much for your wonderful review! We're thrilled to hear you're pleased with your knife and the quick shipping. It's great to know it will make a special gift. We will be sure to send over the positive feedback to Nakamura Blacksmith! If you have any questions in the future, feel free to reach out. Greetings from Japan, The Japanese Food Craftsman Team
After watching the video about this Blacksmith, I was impressed and placed my order, at £177.00.
I waited for some time for my knife to arrive, held at customs.
In the end I ended up paying £245.00 after customs fees, VAT & further postage fees in the UK.
So this turned into quite an expensive knife!
After opening the box, I tried to remove the knife from the plastic sleeve, the sleeve was stuck tight to the knife and had to be ripped away?
It seems that the excessive amount of varnish or lacquer had adhered to the plastic?
The wooden handle has dye coming off on my hand and to make things worse, the ferrule is plastic? there is quite a step between the ferrule and handle, which is not comfortable.
The applyed varnish needed to be removed, I used acetone to the varnish and adhered plastic, doing so completely removed the kurouchi finish?
I also needed to pack the gaps between handle steel tang with Beeswax?
This could be a great knife!
I feel very disappointed.
Absolutely love this knife!!! It cuts so cleanly and requires very little care. Someone commented on the change in color, I recommend you clean it well after every use and dry it immediately. I also bought a 2nd as a gift and my coworker absolutely LOVED IT!!! I sincerely enjoy cutting with it and hope to use it for many more years to come.
Dear Arnoldo Monroy,
Thanks so much for the review, and happy to hear both you and your coworker are enjoying your knife!! We will let Nakamura Hamono know you are happy with your order, and we hope you'll have many chances to create delicious dishes with it.

Amazing knife to cut with. Glides effortlessly through food and does not get stuck at all. Is beautiful and thin behind the edge. Will buy another knife from this craftsmen. No complains at all with the product nor the customer service. Totally worth it
Dear Julian,

I love the way it cuts but I do wish it was easier to care for. Still, it really knocks out the work when dealing with a lot of chopping!
Karen Vincent,
Thank you so much for your purchase and for your honest review! The main drawback of traditional Japanese carbon steel knives is that they require a bit more TLC than modern stainless steel knives. However, if you are someone who does a lot of cutting work in the kitchen, you may just find that the sharp edge and ease of use is well worth the extra care!
Thanks once again for supporting Japanese craftsmanship!

The knife is beautiful, works a charm. I love using it in my kitchen. What I didn’t like was the ridiculous tariff imposed by that nightmare of a president we have. For a $229 knife I pain over a $150 in tariff. Not the maker’s fault, but you need to make customers acutely aware of the fact before making a purchase.
Dear Charles Brack,
Thank you for your review and for supporting Kabayama Blacksmith with your order! We are very happy to hear that you love your knife, and will be happy to share your positive feedback with the craftsman. We are very sorry to hear about your negative experience with US tariffs - we are working hard on improving our shipping process to ensure US customers are aware of the cost of tariffs due at the time of purchase. As US customs regulations are constantly changing, this is difficult for a small company such as ours to implement, but we are doing our best to find a solution to improve the shopping experience for US customers as quickly as possible. We thank you for your kind understanding as we do our best to adapt to the rapidly changing environment. Thank you once again for sharing your thoughts and experience.

Razor blade sharp knife that's light weight and cuts through fish and meat with one movement as its intended use! Perfect for high-volume work as mine with fish and meat in a professional kitchen! Will definetly buy more knives from this shop.
Dear AnKo,
Thank you so much for your positive review and for supporting Japanese craftsmen! We will be sure to pass your positive feedback on to Nakamura Hamono! We look forward to serving you again soon.

This handcrafted knife is absolutely top-notch.
I was very impressed by the video of the knife's production. The fact that the blacksmith does everything himself was what convinced me to buy it.
I also believe that this gives the knife a special character.
The fast delivery and excellent customer service are also worth mentioning.
My next knife will definitely be another one from NISHIDA HAMONO.
