KISEKI by FUKUDA HAMONO

A KISEKI Santoku knife by Fukuda Hamono.

Born in Seki, Japan’s city of blades, KISEKI knives are the country’s first kitchen knife collection made from cemented carbide, a material once reserved for industrial tooling.

Developed by 126-year-old workshop Fukuda Hamono, KISEKI knives deliver a thin, stable edge that stays sharp far longer than conventional steels and makes cleaner cuts that help retain texture and flavor.

PHILOSOPHY AND PROCESS

Sharper for Longer

KISEKI uses cemented carbide to deliver an edge that outlasts conventional steels. It cuts with less force and causes less cell damage, so ingredients keep their texture and moisture. In a professional setting this means cleaner prep, fewer resharpening cycles and consistent performance across services.

Precision You Can Scale

Each blade is wire-cut for roughly ten hours to ±0.001 mm, then finished on diamond wheels to a razor-thin geometry. The process avoids stamping or laser shortcuts and is controlled for uniformity, giving reliable, batch-to-batch quality that reduces variability and after-sales risk.

Flavor Kept, Story Built

Tests show the cut retains juices and curbs oxidation, which helps dishes taste brighter. Handles crafted from local Gifu hardwoods add provenance and a clear materials story. The result suits premium retail, chef partnerships and corporate gifting, with a product that performs and presents.

Message from the Makers

“We believed a knife could do more than cut - it could make food taste better. Our mission was to achieve the impossible: a blade that never compromises on sharpness, durability, or flavor. KISEKI carries the legacy of Seki’s craftsmanship into the future, combining century-old expertise with cutting-edge engineering. We hope every slice you make brings joy, connection, and a deeper appreciation for the gifts of nature.”
