Shirogami No.2 Knives | White Steel
Shirogami No.2, or White Steel No.2, is the more accessible of the two white steels. Still a pure high-carbon steel with exceptional sharpness, it is slightly more forgiving than No.1 in terms of edge durability and chipping resistance. It is the white steel most commonly used by Japanese blacksmiths for everyday professional knives.
If you are new to carbon steel Japanese knives, Shirogami No.2 is the better starting point than No.1. Like all carbon steels, it requires drying after use and will develop a natural patina.
