This is where home cooks step up from their first Japanese knife. Our Mid-Range collection features real blacksmiths and Tosa, Echizen, and Seki workshops you'll find at higher tiers but in their everyday-but-elevated lines.
Expect refined handle materials (magnolia wood, chestnut, oak), specialty steel cores (Aogami Super, VG-XEOS), polished or Damascus finishes, and slightly longer or more specialised blade profiles. Each knife is hand-forged in Japan with the maker's name engraved. Ideal for the cook who already knows what they're looking for and is ready for something they'll use for decades.
