The yanagiba (柳刃) knife is Japan's sashimi knife, a long, single-beveled blade designed to slice raw fish in a single drawing motion without tearing the flesh. It is the knife Japanese sushi chefs spend years learning to use properly, and the one that rewards patience and technique more than any other. Every yanagiba blade in our collection is forged and finished in Japan by specialized blacksmiths.
