Shirogami No.1 Knives | Pure White Steel
Shirogami No.1, or White Steel No.1, is the purest form of high-carbon steel used in Japanese knife-making with minimal alloying elements, maximum potential sharpness. It is harder and more brittle than Shirogami No.2, capable of an extremely fine edge that is also more demanding to maintain and more sensitive to chipping under heavy use. This is the steel for cooks who prioritize sharpness above all else and are prepared to care for their knives accordingly. Every knife in this collection is forged in Japan.
