Shirogami No.1 Knives | Pure White Steel
Shirogami No.1, or White Steel No.1, is the purest form of high-carbon steel used in Japanese knife-making with minimal alloying elements, maximum potential sharpness. It is harder and more brittle than Shirogami No.2, capable of an extremely fine edge that is also more demanding to maintain and more sensitive to chipping under heavy use.
