OMOI (想) is Japanese Food Craftsman's exclusive collaboration brand, created through partnerships with exceptional Japanese artisans to develop pieces that exist nowhere else. In Japanese, omoi means "thought," "feeling," or "intention". It is the inner spirit guiding a craftsman's hand.

In this collection, OMOI (想) is partnering with Nenohi Cutlery. These aren't their standard knives. Their exclusive and innovative stainless steel material, damascus finish, and special handle were developed based on feedback from our community and Nenohi's own R&D results. Each piece blends Nenohi's 50+ years of mastery with our understanding of what works in real kitchens.

Every knife in this collection bears both Nenohi Cutlery and OMOI (想) marks on the blade, a symbol of our shared commitment to exceptional craftsmanship. And they are exclusive to our store, so you will not find them anywhere else!

MEET THE CRAFTSMEN BEHIND NENOHI CUTLERY

Founded in 1975, Nenohi operates a retail shop in Tokyo’s Tsukiji district, with its headquarters, research and development, and factory based in Kanagawa.

Its collection includes traditional Japanese knives, hon-yaki and all-steel constructions, as well as Western-style blades. The renowned NENOX S stainless series is prized for its keen edge and dependable everyday performance.

Each knife is handcrafted in small batches, about ten pieces per day, with specialists overseeing every step, from heat treatment to geometry inspection, ensuring uniform quality and precision.

Nenohi’s knives are trusted by professional chefs in Japan and around the world, with distribution in markets including the United States, the Netherlands, and Korea.

No, Nenohi Cutlery knives should not be washed in the dishwasher due to their artisanal crafting process. To prevent damage to your knife and ensure it lasts you for years to come, please wash the knife by hand with a mild detergent and gentle sponge.

After each use, be sure to wash the knife by hand using a mild detergent and gentle sponge. Rinse clean and wipe with a soft dish towel until completely dry. Store in a dry place.

Will my Omoi by Nenohi Cutlery knife rust?

Omoi by Nenohi Cutlery knives are crafted using a premium and exclusive stainless steel, making them rust resistant and low maintenance when compared to carbon steel knives.
