Crafted in the legendary blade city of Seki in Gifu Prefecture, this diamond whetstone can be used to keep the sharpness of your KISEKI cemented carbide blade. 

The KISEKI Diamond Whetstone has one-sided #1200 grit and comes with a knife attachment made of PP+ Ceramic, that helps creating the perfect angle for sharpening and a natural wood base. (*only use with KISEKI knives)

KISEKI knives are characterized by their good edge retention compared to steel or stainless steel knives, but still the sharpness of the blade will deteriorate over time. Ordinary abrasive tools will not work well with thecemented carbide material of the KISEKI blades, so the smithy recommends this specific stone for their blades.

Product Care Instructions

How to Use & Care for Your KISEKI Diamond Whetstone

Wet the surface with water before sharpening — never soak a diamond whetstone. Fit your KISEKI knife into the included attachment to hold a consistent angle, then work the blade along the #1200 surface, keeping it wet. Use only with KISEKI knives; ordinary whetstones won't sharpen tungsten carbide.

Afterward, rinse, wipe dry, and store in a dry place. A diamond whetstone never needs flattening.

Keep out of reach of children. Use on a stable, flat surface. Keep fingers clear of the blade edge. For kitchen knife use only.

KISEKI Petty Knife - Japanese Food Craftsman Shop

Fukuda Hamono

For centuries, Japanese blades have balanced artistry and performance. Yet, traditional steel knives came with trade-offs, carbon steel rusts, stainless steel dulls.

Seeking a better way, engineer Keisuke Fukuda, set out to combine the best of both worlds, pioneering the use of ultra-hard cemented carbide in a kitchen knife.

The result was the KISEKI collection of knives made by his family company Fukuda Hamono, a workshop with more than 126 years of history. The KISEKI knives have an edge made from tungsten carbide that glides effortlessly, holding its sharpness longer than conventional blades.

But creating KISEKI required pushing beyond the limits of conventional knife-making.

The dense, weighty carbide cannot be pressed or laser-cut like steel. Each blade is wire-cut over ten hours with 1/1000 mm precision, then finely ground using diamond wheels to achieve a razor-thin edge that preserves the cellular structure of food.

You do not need to purchase another KISEKI Knife Attachment for Sharpening separately. One attachment suitable for the knife size (Santoku or Petty) you purchased is included with your KISEKI Diamond Whetstone.

If you wish to use your KISEKI Diamond Whetstone with both your KISEKI Santoku and Petty knives, you may wish to purchase another attachment separately for the size knife you did not originally purchase a Diamond Whetstone for.

Can I use my diamond whetstone to sharpen other knives?

We do not recommend using your KISEKI Diamond Whetstone for other knives made from different materials. The KISEKI Diamond Whetstone was designed for use specifically with KISEKI Santoku and Petty knives by Fukuda Hamono.

How do I use my diamond whetstone to sharpen my KISEKI knife?
