It delivers exceptional sharpness, durability, and cutting performance. The kurouchi finish enhances rust resistance while showcasing the traditional forging process unique to Tosa.
About the Blade Shape: A hybrid of yanagiba and usuba knives, double-bevel kiritsuke knives are multi-purpose knives with a slight emphasis on meat. While the single-bevel is traditionally used by head chefs, for the at-home cook, we recommend a double-bevel kiritsuke which measures between 210mm and 240mm long.
