The kiritsuke (切付) is the knife traditionally reserved for the head chef in a Japanese kitchen. It is a long, angular blade that combines the function of a yanagiba and an usuba in one. It demands skill and experience to use well, which is part of its prestige. Every kiritsuke blade in our collection is forged in Japan by authentic artisans.
