The gyuto (牛刀) knife is the Japanese take on the Western chef's knife: longer, thinner, and ground to a much finer edge. It handles meat, fish, and vegetables with equal precision, making it the most versatile knife in a Japanese kitchen. Every gyuto blade in our collection is hand-forged by an authentic Japanese blacksmith using traditional techniques. If you are new to Japanese knives, the gyuto is a natural starting point.
