Ginsan Steel No.3 Stainless Steel Knives
Ginsan (銀三), or Silver Steel No.3, is the steel that bridges the gap between carbon and stainless. A high-carbon stainless produced by Proterial (former Hitachi Metals) that takes and holds an edge closer to aogami than to standard stainless, while remaining rust-resistant. It is used by some of Japan's finest blacksmiths precisely because it demands less maintenance than carbon steel without compromising sharpness. If you want the performance of carbon steel with the practicality of stainless, ginsan is the answer.
