Deba Knife
The deba (出刃) knife is Japan's fish butchering knife. It is thick-spined, single-beveled, and built to break down any whole fish cleanly, including cutting through small bones. It is a specialist tool, not an all-purpose blade, and in Japanese professional kitchens it is considered essential as the yanagiba.
