Aogami No.2 Knives | Blue Steel Japanese Carbon Steel
Aogami No.2, or Blue Steel No.2, is a high-carbon steel produced by Proterial (former Hitachi Metals) that sits at the heart of Japanese traditional blacksmithing. It takes an exceptionally sharp edge and holds it well, rewarding cooks who maintain their knives properly. Like all carbon steels, it will develop a patina over time and requires drying after use. This is not a weakness but a characteristic of a steel that prioritizes sharpness above ease of maintenance. Every knife in this collection is forged in Japan by authentic blacksmiths.
