Thank you, I just received my knife, it was so beautiful, untill I cut my first tomato and cucumber and it turned brown:( I am trying to wash it, but its not going away, not sure what I did wrong.
Also my sharpening stone came broken, I think extra stickers like : “ Fragile” “ Handle with care” would be beneficial for such long and rough transportation.
I made some pictures to share with master, let me know which format to use to send them.
I still will be using this knife with Love and respect to handmade ancient craft.

Really beautiful knife

Hi, I received my knife in france in about 2week reel well packed. Little origami and card, description about Nakamura homono top. The Nakiri knife is.a beautiful peace of man's craft it cuts perfectly, so thin and light a amazing sensation to use. I enjoy it a lot thanks M. NAKAMURA and son for your work. Nakamura Blacksmith Kurouchi Santoku 165mm review

The transaction was smooth. Shipment and delivery were fast. The knife itself seems very flimsy and I can bend the knife with two fingers like a tin. I don't know if the one I received was an exception or not as there is nothing to compare against. The blade edge and the kiriba is all bent so I won't be able to use a sharpening stone on kiriba area. So I use tagane and hammered for about half an hour to somewhat straighten so that I can use the sharpening stone. On the mine (spine) side the thickness is quite uneven due to mechanical hammering during the manufacturing process so will not be able to tell if the knife blade is straight or not especially towards the tip which is tapered. The tip was sort of tsuru kubi due to a slight dimple about one inch from the tip. Unless the knife I received was a defective one, I will not recommend. I've been using this knife for about 10 days and it keeps its sharpness but I have to keep bending the blade to make it straight.

nakamura santoku 150mm

After watching a YouTube video on the Nakamura foundry I decided to buy this chefs knife. It arrived safe and in a timely manner. It also came with a very nice Whetstone. It is extremely sharp. The only question that I have is regarding tempering. When staining the raw wood handle, I noticed a slight bend in the blade. In straightening the bend, I found that the whole blade bends very easily. As this is my first Japan forged Santoku, I am wondering whether this is normal? Perhaps a step was missed in the process? I have no other knives that are t his malleable. Please advise. I will give a 5 star rating based on everything else.

Thank you for your purchase and for your positive review! As we mentioned via email, thin knives made from soft iron in this price range (so on the less expensive side of the spectrum) tend to have blades that are thin and easily bendable, so this is completely normal. The knife nevertheless has a strong steel core (white steel Shirogami #2).

Traditional handcrafted Japanese kitchen knives will certainly be very different from the commercial stainless steel knives many of us are used to, and require a little bit of TLC and time to get used to. So please do feel free to contact us again should you have any questions about how to properly care for/use your knife!
