A kiritsuke knife is a traditional Japanese hybrid knife that blends the slicing performance of a yanagiba blade with the vegetable-cutting precision of an usuba knife. Known by its long, flat edge and signature k-tip (reverse tanto tip), the Kiritsuke excels at push-cutting, fine slicing, and detailed work where control and accuracy matter. Traditionally used only by head chefs due to its single-bevel design and demanding technique, the Kiritsuke has become one of the most striking and respected blades in Japanese cuisine.
