A deba knife is a traditional Japanese single-bevel blade designed for butchering and filleting whole fish with power and precision. Featuring a thick spine, durable heel, and a fine, sensitive tip, the Deba excels at cutting through fish heads, feeling for bones, and making clean fillet cuts. While originally crafted for fish preparation, many cooks also use the Deba for breaking down poultry and working with meats with small bones.
